I love cooking for and hosting Thanksgiving! Every bite of our traditional family dishes takes me down memory lane, as do the wonderful smells filling the kitchen in the days leading up to the feast. Along the way, I started putting a Scandinavian spin on many of the recipes from my childhood. I hope you will invite a few into your home this year!

Pumpkin Oat Bread

We always start our Thanksgiving morning by watching parades, making “apple turkeys” with marshmallow and raisin feather fans, and eating lots of freshly baked pumpkin bread. This pumpkin oat bread is a gluten-free version of my mom’s famous recipe and uses rolled oats and oat flour with a touch of cardamom, cinnamon, nutmeg, and cloves. So moist and perfect for a Thanksgiving Fika!

Buttermilk Rye Biscuits

I have been making these biscuits as long as I can remember–sometimes with straight wheat flour, but preferably with the addition of rye. The rye flavor adds a slight nuttiness and savory quality. By only using a small amount of rye in the total flour content, the biscuits stay light and fluffy and the flavor is just right for making tiny leftover turkey sandwiches!

Cranberry Orange Ginger Sauce

This fresh cranberry sauce has so much zesty flavor from the citrus and ginger, plus the added Scandi bonus of lingonberries!

Rye and Juniper Dressing

Rye and Juniper Dressing is both savory and sweet, made from Swedish Rye Bread, prunes, and caramelized apples and fennel. Some say that the dressing (or stuffing) is their favorite part of the meal. This version is sure to be a Thanksgiving favorite recipe!

Swedish Apple Oat Pie

There can never be enough pies at Thanksgiving, but apple wins out over pumpkin every time for me. This Swedish Apple Oat Pie is much like a crisp in texture and taste, with a chewy spiced oat crust that is like a giant oatmeal cookie. Gluten-free and vegan, too!

Pumpkin Pillow Cookies

Pies get most of the attention at a Thanksgiving meal, but these pumpkin pillow cookies are a super quick and easy way to add some variety! They come together in 15 minutes and are both vegan and gluten-free.
