Ingredients
1cupblanched almond flour
1/3cupgluten-free oats
¼teaspoonsea salt
½teaspoonbaking soda
2teaspoonscinnamon
½teaspoonnutmeg
½teaspooncloves
½teaspooncardamom
½cupcoconut sugar
2/3cuppumpkin puree
3large eggs
2tablespoonsvirgin coconut oil
1teaspoonvanilla
Instructions
Preheat oven to 350°.
In a food processor, pulse the almond flour, oats, salt, baking soda, spices and coconut sugar until oats are ground.
Add pumpkin, eggs, coconut oil and vanilla and process until well-blended.
Transfer to an oiled 7x4-inch loaf pan lined with parchment. Bake for 35-45 minutes until a wooden pick inserted in the center comes out clean. Cool completely before removing from pan.
Notes
This bread is not too sweet and is lovely spread with a bit of apricot or cloudberry jam! Enjoy a slice for your next Fika!
