Spiced Buttermilk Oat Waffles

Spiced Buttermilk Oat Waffles are gluten-free with a nice texture from the oats and a touch of cardamom, cinnamon and brown sugar.

Equipment

  • Waffle Iron

Ingredients

  • ¾ cup oat flour
  • ½ cup gluten-free quick oats
  • teaspoons baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ¼ teaspoon cardamom
  • ¼ teaspoon cinnamon
  • ¾ cup buttermilk
  • 1 egg, whisked
  • 4 tablespoons unsalted butter, melted
  • 2 tablespoons brown sugar
  • Freshly whipped heavy cream, for garnish
  • Jam or fresh berries, for garnish
  • Confectioner's sugar, for garnish

Instructions

  • In a large mixing bowl, whisk together the dry ingredients.
  • In a smaller bowl, whisk together the buttermilk, egg, melted butter and brown sugar until smooth. Add to the flour mixture until blended.
  • Lightly oil waffle iron and preheat.
  • Add batter according to manufacturer's instructions and cook until golden brown.
  • Transfer waffles to plates and top with whipped cream, jam, berries or a dusting of confectioner's sugar.

Notes

Tips for Success:

  • This batter is best used on the day it is made but will keep for a day or two in the refrigerator.
  • Quick oats will yield a finer texture than rolled oats in this recipe.
  • Try any toppings you desire.  My favorites are cloudberry preserves or apple butter!
