Spiced Buttermilk Oat Waffles

Spiced Buttermilk Oat Waffles are gluten-free with a nice texture from the oats and a touch of cardamom, cinnamon and brown sugar.

Ingredients

cup
oat flour
½
cup
gluten-free quick oats
1½
teaspoons
baking powder
½
teaspoon
baking soda
¼
teaspoon
salt
¼
teaspoon
cardamom
¼
teaspoon
cinnamon
¾
cup
buttermilk
1
egg,
whisked
4
tablespoons
unsalted butter,
melted
2
tablespoons
brown sugar
Freshly whipped heavy cream,
for garnish
Jam or fresh berries,
for garnish
Confectioner's sugar,
for garnish
Instructions
In a large mixing bowl, whisk together the dry ingredients.
In a smaller bowl, whisk together the buttermilk, egg, melted butter and brown sugar until smooth. Add to the flour mixture until blended.
Lightly oil waffle iron and preheat.
Add batter according to manufacturer's instructions and cook until golden brown.
Transfer waffles to plates and top with whipped cream, jam, berries or a dusting of confectioner's sugar.
Notes
Tips for Success:
This batter is best used on the day it is made but will keep for a day or two in the refrigerator.
Quick oats will yield a finer texture than rolled oats in this recipe.
Try any toppings you desire. My favorites are cloudberry preserves or apple butter!
