2 ½cupsblanched almond flour
3tablespoonscoconut flour
½teaspoonsea salt
½teaspooncardamom
¼teaspoonbaking soda
Pinchnutmeg
½cupmelted virgin coconut oil
5tablespoonshoney
1tablespoonvanilla extract
¼teaspoonalmond extract
Glaze
1cupconfectioner's sugar
½teaspooncardamom
2tablespoonsalmond milk
1teaspoonvanilla extract
¼teaspoonalmond extract
Pinchsalt
Instructions
For Cookies:
In a food processor, combine the flours, salt, soda and spices and pulse until well-blended. Process in coconut oil, honey and extracts until dough forms. Gather dough into a disk, wrap in plastic and refrigerate at least 1 hour.
Roll out dough between 2 pieces of parchment paper or press dough into silicone molds (I have a gingerbread man silicone mold).
Bake cookies at 350° on parchment-lined sheets or in molds for 5-10 minutes, depending on shape size and thickness (keep checking so that they don’t brown too quickly).
For Glaze:
Combine all ingredients in a medium bowl. Whisk until smooth.
Dip the tops of the Cardamom Men in the glaze and allow the excess to drip off.
Cookies should be stored in an airtight container in the refrigerator, and they freeze very well!
