Cardamom Men
Cardamom Men are soft and spiced, and make everything nice! Plump almond flour cookies with a shiny cardamom glaze that are perfect for the holidays.

Perhaps this comes from my Swedish heritage as well as a sense of nostalgia for all of the delicious cardamom treats in our family recipe archives. I love these little Cardamom Men for their simplicity and pure cardamom flavor. They are so moist from the almond flour and the glaze adds just the right amount of sweetness.
The Process for Making Cardamom Men:
I use a food processor to mix the almond flour dough, although a stand mixer will also work. There are two ways to go about the baking. This dough is a bit sticky, so I like pressing it into silicone molds that create the fun shapes. If you do not have molds, try rolling the dough out between 2 sheets of parchment paper to a quarter-inch thickness. You can then use any shape of cookie cutter you like.
This dough bakes quickly so keep an eye on your oven to prevent over-browning. In the molds (which are about 1/2-inch thick), the cookies take 10 minutes. If you are doing cutouts, the baking time may range from 5-8 minutes depending on size.
While the cookies cool, make the Cardamom Glaze. This is a very simple icing of confectioner’s sugar, vanilla and almond extracts, almond milk, and more CARDAMOM! Any milk may be used, but I prefer the taste of almond milk for this recipe. Adjust the consistency to be thin enough for glazing the cookies.
Dip the cookie tops in the glaze and allow the excess to drip off by placing the cookies on a cooling rack.
Once the glaze sets, the Cardamom Men are ready to enjoy! These cookies freeze well, so make a double batch and prepare them for your holiday festivities!

Ingredients
Cookies
- 2 ½ cups blanched almond flour
- 3 tablespoons coconut flour
- ½ teaspoon sea salt
- ½ teaspoon cardamom
- ¼ teaspoon baking soda
- Pinch nutmeg
- ½ cup melted virgin coconut oil
- 5 tablespoons honey
- 1 tablespoon vanilla extract
- ¼ teaspoon almond extract
Glaze
- 1 cup confectioner’s sugar
- ½ teaspoon cardamom
- 2 tablespoons almond milk
- 1 teaspoon vanilla extract
- ¼ teaspoon almond extract
- Pinch salt
Instructions
For Cookies:
- In a food processor, combine the flours, salt, soda and spices and pulse until well-blended. Process in coconut oil, honey and extracts until dough forms. Gather dough into a disk, wrap in plastic and refrigerate at least 1 hour.
- Roll out dough between 2 pieces of parchment paper or press dough into silicone molds (I have a gingerbread man silicone mold).
- Bake cookies at 350° on parchment-lined sheets or in molds for 5-10 minutes, depending on shape size and thickness (keep checking so that they don’t brown too quickly).
For Glaze:
- Combine all ingredients in a medium bowl. Whisk until smooth.
- Dip the tops of the Cardamom Men in the glaze and allow the excess to drip off.
- Cookies should be stored in an airtight container in the refrigerator, and they freeze very well!
