Savory Chive Waffles with Smoked Salmon and Skyr are crisp on the outside, fluffy on the inside, and gluten-free!

Ingredients
2 cupsgluten-free flour blend, like King Arthur "Measure for Measure"
4teaspoonsbaking powder
1teaspoonsalt
2eggs,separated
2 cupswhole milk
6tablespoonsunsalted butter,melted
3tablespoonsfinely chopped fresh chives
Thinly sliced smoked salmon,for garnish
Plain skyr or sour cream, for garnish
Instructions
In a large mixing bowl, whisk together the flour, baking powder and salt.
In a separate mixing bowl, whisk the egg whites until they form stiff peaks and set aside.
Add the milk, melted butter and egg yolks to the dry ingredients. Whisk together until smooth and stir in the chives.
Gently fold the egg whites into the batter until incorporated.
Preheat the waffle iron to high heat.
Add batter according to manufacturer's directions.
Cook the waffles until golden brown and crispy on the outside.
Serve immediately topped with smoked salmon slices and skyr.
Notes
Tips for Success:
Savory Chive Waffles are best served immediately, but can be cooked and frozen for later use. To reheat/recrisp, place waffles in toaster or a 350 degree conventional oven until hot.
Try adding a poached or fried egg atop the salmon and skyr for a delicious brunch dish or light dinner!
Fresh dill is another tasty addition to the batter or as a garnish.
