Savory Chive Waffles with Smoked Salmon and Skyr

Savory Chive Waffles with Smoked Salmon and Skyr are crisp on the outside, fluffy on the inside, and gluten-free! 

Equipment

  • Waffle Iron

Ingredients

  • 2 cups gluten-free flour blend, like King Arthur "Measure for Measure"
  • 4 teaspoons baking powder
  • 1 teaspoon salt
  • 2 eggs, separated
  • 2 cups whole milk
  • 6 tablespoons unsalted butter, melted
  • 3 tablespoons finely chopped fresh chives
  • Thinly sliced smoked salmon, for garnish
  • Plain skyr or sour cream, for garnish

Instructions

  • In a large mixing bowl, whisk together the flour, baking powder and salt.
  • In a separate mixing bowl, whisk the egg whites until they form stiff peaks and set aside.
  • Add the milk, melted butter and egg yolks to the dry ingredients. Whisk together until smooth and stir in the chives.
  • Gently fold the egg whites into the batter until incorporated.
  • Preheat the waffle iron to high heat.
  • Add batter according to manufacturer's directions.
  • Cook the waffles until golden brown and crispy on the outside.
  • Serve immediately topped with smoked salmon slices and skyr.

Notes

Tips for Success:

  • Savory Chive Waffles are best served immediately, but can be cooked and frozen for later use.  To reheat/recrisp, place waffles in toaster or a 350 degree conventional oven until hot.
  • Try adding a poached or fried egg atop the salmon and skyr for a delicious brunch dish or light dinner!
  • Fresh dill is another tasty addition to the batter or as a garnish.
  • Try pairing this dish with a rosé of Pinot Noir!
