These Savory Chive Waffles with Smoked Salmon and Skyr are so versatile for any time of day, simple to prepare yet amazingly satisfying. This recipe is based upon my Great Grandma Agnes Helgemo’s crisp Swedish Waffle recipe, but I have taken the liberty of making it gluten-free and savory by omitting the sugar and adding chopped chives. The result is a crisp yet fluffy waffle with fresh chive flavor that pairs perfectly with thinly sliced cold smoked salmon and tangy Icelandic skyr.
The Process for Making Savory Chive Waffles with Smoked Salmon and Skyr:
This recipe is made crisp and light by the addition of whipped egg whites to the batter. First the dry ingredients are mixed together. I have tested this recipe with King Arthur’s “Measure for Measure” gluten-free flour blend and the results are lovely.
After combining the dry ingredients, whip the egg whites either by hand with a whisk or using a mixer until stiff peaks form.
Set the whites aside and add the milk, melted butter and yolks to the dry ingredients, whisking until smooth. Stir in the chopped chives.
Gently fold in the whipped whites, trying to keep their volume.
Once the batter is ready, preheat your waffle iron. Any style of waffle iron may be used, however for this preparation I like to bring out my small iron for a petite presentation.
Add the batter to the preheated iron and cook until golden brown and crisp on the outside.
When making a big batch, I like to keep the waffles warm and crisp on a baking rack in my oven as I am cooking. I can then transfer them to plates or a platter for topping with the smoked salmon and skyr. Skyr is an Icelandic-style cultured dairy product akin to yogurt, but with a slightly different and very thick texture. Sour cream is also a good substitute if you do not have skyr.

Equipment

Ingredients
- 2 cups gluten-free flour blend, like King Arthur "Measure for Measure"
- 4 teaspoons baking powder
- 1 teaspoon salt
- 2 eggs, separated
- 2 cups whole milk
- 6 tablespoons unsalted butter, melted
- 3 tablespoons finely chopped fresh chives
- Thinly sliced smoked salmon, for garnish
- Plain skyr or sour cream, for garnish
Instructions
- In a large mixing bowl, whisk together the flour, baking powder and salt.
- In a separate mixing bowl, whisk the egg whites until they form stiff peaks and set aside.
- Add the milk, melted butter and egg yolks to the dry ingredients. Whisk together until smooth and stir in the chives.
- Gently fold the egg whites into the batter until incorporated.
- Preheat the waffle iron to high heat.
- Add batter according to manufacturer's directions.
- Cook the waffles until golden brown and crispy on the outside.
- Serve immediately topped with smoked salmon slices and skyr.
Notes
Tips for Success:
- Savory Chive Waffles are best served immediately, but can be cooked and frozen for later use. To reheat/recrisp, place waffles in toaster or a 350 degree conventional oven until hot.
- Try adding a poached or fried egg atop the salmon and skyr for a delicious brunch dish or light dinner!
- Fresh dill is another tasty addition to the batter or as a garnish.
- Try pairing this dish with a rosé of Pinot Noir!
